Gary Maddox mmmmm Pizza Recipe

Gary came home with a terrible desire for pizza the other night  and came up with the following.

2 Ezekiel Wheat Free Tortillas

Extra Virgin Olive Oil

1 tbs almond flour

1 tbs part skim mozzarella cheese

¼ Cup tomato sauce

3/4 cup part skim mozzarella cheese

½ tbs garlic powder

½ tbs Italian seasoning

1 tsp onion powder

½ tsp black pepper

½ medium onion diced

2 tbs green pepper diced

Toppings per taste

Meats – Such as sausage or beef should be

squeezed between paper towels while hot to remove

as much fat as possible.

Pepperoni should be of the turkey variety for reduced fat.


Lightly coat pizza pan with olive oil, place 1 tortilla in pan and brush lightly with olive oil

Spread almond flour and 1 tbs of cheese evenly over tortilla (provides texture and adhesion)

Place second tortilla over first and lightly brush with olive oil.

Bake at 300 degrees, or less for softer crust, for 20 minutes

Insanely Good Chocolate Brownies - Recipe

We love it when our transformers share their finds. Thanks to Renee Gray we have another mah-vel-ous recipe for your chocolate fix. Here ya go!


Jumbo shrimp. Airline food. Boneless ribs. Fuzzy logic. Some words just don’t seem to belong together. I’m betting you’d say healthy brownie falls into that category. Au contraire! How do I know that isn’t the case? Because there was a lot of “yumming” in my kitchen as a gaggle of brownie aficionados devoured these. Refined white sugar out; Grade B maple syrup in. See ya white flour; hello almond flour and brown rice flour. Fare-thee-well butter; come-on-down olive oil! Add dark chocolate, walnuts, and cinnamon, and the result is a decadent culinary oxymoron for the ages.

No Flour, No Sugar, Banana Muffins

This is a good breakfast recipe submitted by one of our lovely Transformers, Gail. 

“I like to have two muffins with an egg and this recipe fits the Jubilee Transformation. I have lost 40 lbs. in 10 weeks and looking forward to losing a few more.” - Gail Griggs


2.5 cups old fashioned oats 

1 cup plain low fat greek yogurt

2 eggs 

1/2 cup honey 

2 tsp baking powder 

1 tsp baking soda 

½ tsp. salt 

1 tsp vanilla 

2 ripe bananas 

Preheat oven to 400 degrees. Spray muffin tin with non stick cooking spray (makes 14 muffins) Place the oats in the food processor and pulse for about 10 seconds. Add the remaining ingredients to the food processor. Process until everything is smooth. Divide the batter into the cupcake tins. Bake 20 minutes.

Garlic Eggs Gary Style - Recipe

A simple recipe and a thought:

When I started the Jubilee transformation I announced to my friends, drinking buddies from work and my relatives (as needed) that I am going off the grid for 90 days. I will still be here if you need me but my routine is changing and I am taking out this period of time for me.  All of them gave me that look as  they were surprised because I was and I am serious about this transformation thing. It was a great way to start.

4 eggs

¼ small onion minced

Splash of skim milk

Light salt

1 tsp cracked black pepper

½ tsp basil (optional)

½ tsp garlic powder

1 small home grown tomato chunked

Shredded American and part skim mozzarella cheese to taste (I like heavy)


Mix eggs, onion, milk and spices, whip longer than usual to aerate or use a blender

Cook eggs in a skillet with a little extra virgin olive oil

Don’t over scramble and try to leave at omelet consistency

Transfer to plate and add cheese topped with tomatoes

I got this recipe from one of my favorite food companies. Homemade “Clean” Coconut Oil Toothpaste Recipe

1 tablespoon organic raw coconut oil1 tablespoon baking soda

5 drops of essential oil for flavoring: peppermint*, grapefruit** or eucalyptus*** oil is suggested.

Liquid stevia can be added for a sweeter version but use one drop at a time until sweet quotient is reached.

1. Mix baking soda and coconut oil in a small container, until well blended and paste like consistency.

2. Add essential oil of choice and mix. Add stevia as needed (optional)

3. Use immediately or store in an airtight container at room temperature.

John Jubilee Fudge Recipe

Here is our amazing Jubilee Fudge Recipe…ENJOY!

1 cup extra virgin coconut oil

1 cup cocoa powder

1 cup honey

Lower calorie version and still very tasty is:

1 cup extra virgin coconut oil

1 cup cocoa powder

3/4 cup Splenda granulated

1/4 cup Honey

Melt oil in sauce pan, then whisk in cocoa powder. Stir in the honey (and splenda if using the low calorie recipe). Heat on low to medium heat for 1-2 minutes. Pour into a 9x13 pan and place in the freezer. Once frozen, cut into small size rectangles and continue to store in the freezer. ENJOY!

Chicken, Green Beans, Squash - Recipe

What’s for Dinner: 
4 ounce chicken breast

1 thin slice skim swiss or provolone cheese


summer squash

green beans

bell pepper 

onion baby bella mushroom

salt, pepper, garlic and seasonings

coconut oil

In skillet coat with coconut oil add chicken breast, salt and cook till nearly done. Add cheese and salsa, your choose of mild, medium or hot. 

Continue cooking on stove top or place in oven till cheese melts and thoroughly  cooked, about 10 minutes. 

In another skillet melt coconut oil and add squash, red onion, pepper, ( I like the yellow or orange) garlic powder and seasonings you like, sauté. 

In another, add coconut oil, add green beans, mushrooms, salt, seasonings and sauté .

Enjoy with a glass of green tea
