Gary came home with a terrible desire for pizza the other night and came up with the following.
2 Ezekiel Wheat Free Tortillas
Extra Virgin Olive Oil
1 tbs almond flour
1 tbs part skim mozzarella cheese
¼ Cup tomato sauce
3/4 cup part skim mozzarella cheese
½ tbs garlic powder
½ tbs Italian seasoning
1 tsp onion powder
½ tsp black pepper
½ medium onion diced
2 tbs green pepper diced
Toppings per taste
Meats – Such as sausage or beef should be
squeezed between paper towels while hot to remove
as much fat as possible.
Pepperoni should be of the turkey variety for reduced fat.
Lightly coat pizza pan with olive oil, place 1 tortilla in pan and brush lightly with olive oil
Spread almond flour and 1 tbs of cheese evenly over tortilla (provides texture and adhesion)
Place second tortilla over first and lightly brush with olive oil.
Bake at 300 degrees, or less for softer crust, for 20 minutes
Remove from oven and press together with rolling pin or flat plate
Your crust is ready
Apply tomato sauce
Sprinkle on all spices (add or subtract to taste)
Add remaining cheese
Add onion and bell pepper
Top with meats if desired
Bake in 300 degree oven for 18 minutes, broil on 550 for 3 minutes to finish cooking toppings
Remove and after cooling for a few minutes slice and devour
